Why You’ll Love This Guinness Brownies Recipe

These brownies are flat out amazing and hard to resist. They are based on this brownie recipe, but modified for the carbonation and such in Guinness. I originally tested this recipe no less than 10 times. And before posting this update, I messed with them again to see if I could make them even better. But guess what? They were already perfect. I just love, love these brownies and I know you will too. Here’s my favorite things about them.

• The best texture. These brownies are super moist and are the perfect combination of fudgy and cakey. They aren’t crazy dense, like some fudgy brownies, but they are dense enough while still maintaining a lovely cake-like quality.
• Guiness-y, but not too Guiness-y. The Guinness in these brownies and in the ganache comes through just the right amount. It enhances the flavor of the chocolate and you can taste the beer just enough, but not too much. Not a beer lover? Me neither. I still love these.
• Finished with a flare. The Guinness chocolate ganache is the perfect addition to these moist brownies. It adds an elegance and an extra boost of chocolate-y flavor that takes them over the top.

Why You’ll Love These Andes Mint Cookies

Need an excuse to hop in the kitchen? This is it. Andes Mints are one of our favorite little chocolate candies and it doesn’t get much better than adding them to cookies. I love making these during the holidays along with more favorites like peppermint sugar cookies, festive sprinkle cookies, and Grinch cookies. Here’s why you’ll love them, too!

• The BEST flavor combination. I am a sucker for a good mint-chocolate combo and these cookies do it right. The freshness of the mint from the Andes candies next to a rich, chewy chocolate cookie. Irresistible!
• Texture. My loved chocolate sugar cookies serve as the base for these delightful treats. They are wonderfully soft and chewy with just the right amount of crisp on the outside from the sugar they are rolled in. They also stay soft and lovely for days, especially with melted chocolate on top that insulates them a bit.
• No chill cookie dough. Many cookie recipes require you to chill the dough before baking in order to prevent the cookies from spreading. You won’t need to do that here which makes this the perfect last-minute cookie recipe.
• Easy to make. In addition to not needing to chill the dough, the process of adding the Andes mints is super easy and simple. There’s no chopping chocolate or special extracts involved. Just place a mint (or two) on each cookie after it comes out of the oven and is still warm and the heat melts the mint right onto the cookie. Then you just have to spread it around and you’re ready to dig in.

Cheesecake has always been a favorite of mine. I love the thick and creamy texture of it. And making various flavors of cheesecake is also a favorite. This mint chocolate version is such a wonderful way to enjoy those flavors. You’ve got the crunchy chocolate Oreo crust, the rich, creamy mint cheesecake filling layered with mint Oreos and gooey chocolate sauce, and then finally the chocolate ganache and chocolate whipped cream. Every bite is full of flavor and texture and should be savored.

And mint and chocolate are easily one of the most classic flavor combinations. Creamy Homemade Baileys Cheesecake

Two things I really love are Baileys and cheesecake. There’s no shortage of Baileys-flavored desserts on this site. So when I realized I didn’t just have a pure Baileys cheesecake recipe, I knew I had to fix the situation.

This cheesecake is very similar to my classic vanilla cheesecake base, with some sour cream swapped out for Baileys. There’s a half cup of Baileys in the filling, which gives it great Baileys flavor without being overpowering. There’s also Baileys in the chocolate ganache and whipped cream. Even when all combined, it’s not too much, but it’s definitely the perfect flavor and SO good!

The final cheesecake is thick, creamy and the perfect combination of Baileys and cheesecake, with a bit of chocolate to compliment it. While cheesecakes take a while to bake, they are really quite simple, yet impressive. Perfect for serving at a dinner party and sure to wow your guests!
