I’m glad you enjoyed it! For straining, it sounds similar to what I do. I press it through the strainer with my spatula.

Made for Christmas and I loved it. However if I make again I won’t do the sparkling cranberries; the sugar just clumped and some of the cranberries bled. Also I found straining the cranberries for the topping difficult. I used a wooden spoon to push mine through a mesh strainer. Lindsay, how did you strain your cranberries.

Absolutely delicious! Made it today for my birthday and it was exactly what I was imagining. Used some GF gingerbread cookies I set aside to make the crumb base. I love that the cranberry topping doesn’t have gelatin, too. Thank you so much!
